Shelanous is a one-of-a-kind dining concept created by Head Chef Rony Parienty and the Shelanous team in Port Melbourne. The restaurant was originally founded as a pop-up in a Caulfield synagogue in July 2023 before evolving into a permanent venue at 154 Rouse Street, Port Melbourne.

Shelanous is a pioneering multi-sensory fun dining experience that blends chef-curated seasonal Australian cuisine with immersive storytelling, theatrical presentation, beverage pairings and exceptional hospitality. Guests can enjoy a carefully crafted degustation journey, with kosher meal options available upon request.

The format is intimate, with limited seating, a fixed degustation menu, and an experience that is deliberately designed to feel more like a show than a standard dinner. Each course is built around a broader sensory journey, with serving boards, lighting, garnish, sound, and pacing all contributing to the evening's narrative. Shelanous is part of the broader restaurant group that includes sister restaurant, Shelly.

- Jean-Louis - Front of House Lead: Raised in Paris with 18+ years of industry experience across Sofitel, M Gallery and luxury hospitality brands in Paris, New Zealand and Australia. Dedicated to creating "sparkle moments" for Shelanous guests.
